This cheesy hamburger dip has been a crowd favorite at my house for as long as I remember – I bet your family is going to love it, too. So, do not hesitate in saving this recipe!
Guess what! This dip with hamburger meat also makes a great game day appetizer! Just throw it into a slow cooker to keep the cheese nice and creamy.

- ground beef
- small onion
- diced tomatoes with green chilis
- cream cheese
- Velveeta
- Tortilla Chips
Pantry Staple Spices Used:
- cloves of garlic (or garlic powder if you prefer)
- chili powder
- paprika
- cumin
- Salt and pepper

I am sure you have these in your kitchen, but in case you don’t I wanted to share my favorite versions!
Modifications:
The more you cook, the more you understand that a recipe is more of a suggestion. 🙂 I like to start with the base to get times, temperatures, ideas, etc then start changing things. Here are a few ways you can modify this same recipe!
If you like more spice, add a tablespoon or two of taco seasoning when you add the other powdered spices. Then, top each bowl with a bit of shredded cheddar cheese, lettuce, and dallop of sour cream to make it more of a taco dip.
If you brown and drain the lean ground beef, you can throw it and everything else into a crock pot to allow it to cook itself over the next 2-3 hours on low.
If you prefer a bean dip to this beef queso, you can add in a can of refried beans or black beans and a few more green chiles when you add in the Velveeta.
How long does Velveeta dip last?
When storing a velveeta based dip, you can keep it in your fridge for 5-7 days as long as it is in an airtight container.
However, if you have added meat to it, like in this recipe, you may only be able to keep it for 3 or 4 days.
Also note that if you didn’t place it in the fridge within a couple of hours of cooking it, it needs to be thrown out! Bacteria grow rapidly at temperatures between 40 °F and 140 °F.

Ingredients
- 1 pound ground beef
- 1 onion small, chopped
- 2 cloves garlic minced
- 1 teaspoon chili powder
- 1 teaspoon paprika
- ½ teaspoon cumin
- 14 oz diced tomatoes with green chilis
- 8 ounce cream cheese cubed
- 16 ounce Velveeta cubed
- Salt and pepper
- bag tortilla chips
Instructions
Cook the ground beef in a large skillet with the onion and garlic. When the beef is cooked through, season with chili powder, paprika, cumin, salt and pepper.
Reduce heat to low and stir in the diced tomatoes with green chilies, cream cheese, and Velveeta cheese. Cook until the cheese is melted, stirring occasionally.
Serve with tortilla chips
