A note about the apples: I'm using freeze-dried cinnamon apples in my recipe for a little more crunch. For a chewier option, you can use dried apples, or for a much crunchier option, you can use apple chips.

When rounding out your lunch, choose some fresh veggies like carrots and celery sticks. Other great choices are raw broccoli, bell pepper sticks or rings, or kale chips. You could also include a peanut butter or homemade ranch dip.

For the serving of dairy, you could include a natural cubed cheese (processed American cheeses can include gluten), or a cottage cheese or yogurt.
