Chili and Paleo work extremely well together because it’s a great way to mix a lot of meat with a lot of vegetables. The biggest change up to a traditional chili recipe is getting the beans out because there’s no legumes when eating Paleo. Whenever I am craving a good hearty, soul-satisfying bowl of paleo chili, these are the recipes I make again and again. They also freeze very well, so make extra and freeze the leftovers for a quick meal later.

Pegan Chili with Homemade Hemp Tofu

Ingredients

For hemp tofu:

1 cup shelled hemp seeds
2 cups water
¾ tsp nigari or 1 ½ tbsp lemon juice

The rest of ingredients:

¼ cup plus 2 tablespoons olive oil
1 medium red onion, finely chopped
¾ pound pumpkin, cubed
2 garlic cloves, minced
2 large red bell pepper, deseeded and finely chopped
1 medium chili, minced
1 tbsp chili powder
1 teaspoon ground cumin
1 pound tomatoes, chopped
½ teaspoon dried oregano
½ cup finely chopped fresh cilantro

Instructions

1. To make the hemp tofu, place the hemp seeds and water in a blender and blast on high for one minute until combined. Put the hemp milk in a pot and heat over medium heat and bring to a boil. Continue to cook for four more minutes, stirring constantly. If using nigari, dissolve it in a half a cup of warm water. Remove the hemp milk from the heat and wait until the temperature reaches 155F.

2. Add the nigiri solution or lemon juice and gently stir a few times. Let sit for 15 minutes. Strain the cheese in a cloth. Squeeze well to remove the water and place in a colander. Press the cheese down with a plate topped with something heavy like cans and let it stay pressed for 30 minutes.

3. Meanwhile, in a large pot, heat the olive oil over medium heat. Add the onion and cook for 5 minutes. Add the garlic, minced chili, chili powder and cumin and cook for 30 seconds. Add the pumpkin cubes and cook for 2 minutes. Add the chopped tomatoes and oregano and cook for 30 minutes or until pumpkin is tender. Cut the hemp tofu into cubes and add them in a pot. Mix gently to combine. Add the chopped cilantro and season to taste. Serve immediately.
